Maple syrup making is an ancient art that has changed little over time.  Native Americans taught European settlers how to extract the sap of maple trees and boil it into the delicions, versatile sweetener that remains popular today.

At Cooks' Woods, maple syrup is produced in much the same way it has been for decades.  In the early spring, when daytime temperatures are above freezing and night-time temperatures are below, taps are driven into the thin layer of wood just beneath the bark of the farm's maple trees.  Sap flows from the trees into a network of tubing and then into a series of barrels and bulk tanks.  The sap is collected from these containers and transported to the sugar house where it is boiled into syrup using a traditional wood fired evaporator.  The syrup is then bottled on the farm and sold locally.  Its flavor, like that of all site-specific maple syrups, is unique to its location.

Thank you for your interest in Cooks' PURE maple syrup!  We can notify you when the sugaring season is about to begin if you would call us at (608)943-8099.   Our answering machine will give you a message with this information.   While the exact dates of this year's sap collection and boiling are dependent on the early spring weather, we want you to know how to contact us to arrange a farm visit during the season if you like and how to order syrup if you want it.

Typically we make syrup during March, but we may begin as early as late February and stop as late as the first week in April.    Since we do not boil sap every day, the answering machine message will also tell you if we are boiling sap into syrup on the day that you call.  The message will be updated daily by 8 a.m.  You are welcome to visit any day that we are boiling from 9 a.m. to 4 p.m. and on other days by appointment only.

 

We will be hosting a maple syrup open house at our farm on Saturday, March 29, from 9 a.m.-4 p.m.  Maple treats will be available to sample along with free recipes, and syrup making demonstrations will be offered throughout the day.  Syrup will also be available for purchase both at the open house and at other times by appointment.  For syrup quantities and prices please check the "Price List and Ordering" page of this web site or call us.   We hope to welcome you this sugaring season!  

           
  • You may buy syrup at the farm as long as quantities permit.  Please call ahead if you would like us to package a specific quantity for you.  We will return your call to arrange for pick up of your order.
